Mandarin Spinach Salad with Tender Bits

INGREDIENTS:
- 1 cup Loma Linda Tender Bits
- 1 can (6 ounces) orange juice concentrate undiluted
- 6 cups washed torn spinach
- 1/2 cup chopped celery
- 1/4 cup chopped green onions
- 1 can (11 ounces) mandarin oranges drained
- 1/2 cup unsalted cashews
- 1/2 cup sweet and sour salad dressing
DIRECTONS:
- In a small bowl, combine LOMA LINDA Tender Bits and orange juice; allow to marinate at least 30 minutes.
- In a large bowl, combine spinach, celery, green onions, mandarin oranges
- and cashews.
- Drain Tender Bits and add to salad mixture. Toss gently with sweet and
- sour dressing.
